Easy Healthy Blueberry Muffin Recipe for Dessert or Breakfast

 

How to make 24 Delicious Blueberry Muffins!




Ingredients:

100g Flour
100g Butter, softened
60g Caster Sugar
2 Free-range eggs
  tsp Baking Powder
Frozen or Fresh Blueberries to your liking (100g punnet) 
Pinch of salt 

Equipment:

Mixing Bowl
Wooden/Silicone Spoon
Weighing Scales
Sieve
Muffin Cases
Muffin Baking Tray
Timer (Phone)

Instructions:

Step 1

Soften 100g butter, add with 60g of caster sugar to a mixing bowl.

Step 2

Add 2 free-ranged eggs to the mixing bowl and mix for a few minutes until combined. 

Step 3

Sift 100g flour and 1 1/2 tsp Baking Powder into the mixture and combine with the blueberries and a pinch of salt.

Step 4 

Fill each muffin case on the baking tray halfway with the mixture.

Step 5

Cover your mixture and refrigerate until your oven is preheated at 200C/180C Fan/Gas 6.

Step 6 

Bake until golden for roughly 20-25 minutes.

Step 7

Enjoy your blueberry muffins. 🙂
